Avocado and Corn Salad.

This sweet and creamy salad is an excellent burrito or taco filling as well as a side anytime.

Makes about three cups.


  • 2 medium avocados
  • 2 teaspoons of lemon juice
  • 1 cup of corn (preferably fresh)
  • 1 teaspoon cumin seeds
  • Oil
  • Salt


Cut the avocado into cubes and place in a bowl. Mix with the lemon juice.

Add the cumin seeds to a saucepan and dry fry of a medium heat for a minute. Add the corn and little oil and saute for 20 seconds.

Mix the corn in with the avocado and season with salt.
