Apple Sauce.

Apple sauce is the egg replacement for many of the baking recipes on this site and it is great to use because it is fat free and allows for less sugar to be used. It can also be bought in the supermarket.

Makes 5 cups of apple sauce.

  • 8 large apples
  • 2 tablespoons of sugar (for very tart apples only)

Cut the apples into quarters and remove the core and seeds. Chop each quarter into small cubes.

Cook the apple over a high heat in a large saucepan with half a cup of water for about 10 minutes. The apples should have disintegrated into a large foamy sauce. Remove from the heat and blend until smooth.

Keep the sauce in the freezer in one cup portions.
