Apple, Cinnamon and Coconut Porridge.

This light and delicious porridge is a great everyday breakfast especially in winter.

Makes two large serves.


  • 1 cup rolled oats (or half oats & half quinoa)
  • 1 large apple
  • 2 cups water
  • 1/3 cup shredded coconut
  • 1/4 cup sliced almonds
  • 1 tablespoon sugar (cane if you have it)
  • 2 tablespoons of agave syrup (or maple syrup)
  • 1 teaspoon cinnamon
  • 1 pinch of nutmeg
  • 1/3 cup currants
  • 2 teaspoons lemon juice
  • 1/4 cup soy milk
  • Berries for the top
  • About 2/3 cup of soy milk to serve


Cut the apple into thin slices. Add the apple, oats, water, coconut, almonds, sugar, agave syrup, cinnamon and nutmeg into a saucepan and simmer for 10 to 15 minutes until the apple slices are cooked but are not too soft.

Stir in the lemon juice and 1/4 cup of soy milk and remove from the heat.

Spoon into two bowls, pour a little extra soy milk over the porridge and put some berries on top.
