ANZAC biscuits are delicious chewy bikkies that apparently kept our troops fighting in WWI and I can imagine they would have, being the last century version of the high energy bar.

Makes 12 biscuits.

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 3/4 cup brown sugar
  • 2/3 cup vegan margarine (125 grams)
  • 2 tablespoons golden syrup
  • 2 tablespoons water
  • 1 teaspoon bicarbonate of soda

Heat the oven to 180C / 350F.

Mix together the flour, oats, coconut and sugar.

In a saucepan melt the margarine and golden syrup together. Add the water and then bicarb to the margarine and golden syrup. Stir into the dry ingredients.

Roll the mixture into golf ball sized pieces of dough and place on a tray. Press each down with a fork.

Bake in the oven for 12 minutes. The cookies will be very soft until they are cooled.
